Ingredients for Fluffy Blueberry Pancakes:

  1. 4 small or 3 bigger super ripe peeled bananas ca. 235g.
  2. 108 ml =9tbsp oil (light, organic, canola if you like).
  3. 1 tbsp liquid vanilla.
  4. 700 ml =3c plant milk.
  5. 1/4 tsp not leveled at top of tsp salt.
  6. 830 g =5¼c flour (any light kind).
  7. 64 g =4tbsp baking powder.
  8. Handful rinsed and cleaned blueberries.

Step by step how to cook Fluffy Blueberry Pancakes:

  1. Place and mash bananas either manually or by mixing slowly.
  2. Add oil, vanilla, milk and stir till well combined by hand or at lowest speed.
  3. Add rest of the ingredients except for the blueberries and combine till mixed. Doesn't need to be smooth.
  4. Heat up your griddle or skillet to 200°C.
  5. Dab of plant butter for each pancake.
  6. Pour ladle's amount onto griddle.
  7. Push blueberries into top of dough on every pancake.
  8. Wait for about 3 to 4 minutes.
  9. Now flip and press down a bit with the spatula, so the blueberries don't stand out as much.
  10. Wait another 3 to 4 minutes.
  11. Aren't they fluffy.
  12. Serve on plate with topping of your choice.
