Ingredients for Crockpot Southwest Chicken 🐔:

  1. 1 pack chicken thighs (boneless, skinless).
  2. 10 cloves garlic, minced.
  3. 1/8 teaspoon black pepper.
  4. 1 tablespoon oregano leaves.
  5. 1 tablespoon parsley flakes.
  6. 1 teaspoon ground cumin.
  7. 1 can (15.5 ounce) black beans, undrained.
  8. 1 cup frozen corn.
  9. 1 jar (24 ounce) salsa (your favorite!).
  10. 1 can (14.5 ounce) low sodium chicken broth.
  11. Cooked yellow rice.

Step by step how to cook Crockpot Southwest Chicken 🐔:

  1. Rinse and pat dry your chicken thighs.......
  2. Place thighs into your crockpot.......
  3. Add to crockpot : garlic, black pepper, oregano,parsley flakes, cumin, black beans, corn, salsa and chicken broth, stir slightly........
  4. Cover and cook on low heat for 6 hours, stirring occasionally and leaving lid to crockpot partially opened midway thru cooking.......this helps to keep your chicken from becoming too watery as it cooks !.
  5. Shred chicken thighs lightly with 2 forks when chicken is cooked thru........
