Ingredients for Crockpot Southwest Chicken 🐔:
- 1 pack chicken thighs (boneless, skinless).
- 10 cloves garlic, minced.
- 1/8 teaspoon black pepper.
- 1 tablespoon oregano leaves.
- 1 tablespoon parsley flakes.
- 1 teaspoon ground cumin.
- 1 can (15.5 ounce) black beans, undrained.
- 1 cup frozen corn.
- 1 jar (24 ounce) salsa (your favorite!).
- 1 can (14.5 ounce) low sodium chicken broth.
- Cooked yellow rice.
Step by step how to cook Crockpot Southwest Chicken 🐔:
- Rinse and pat dry your chicken thighs.......
- Place thighs into your crockpot.......
- Add to crockpot : garlic, black pepper, oregano,parsley flakes, cumin, black beans, corn, salsa and chicken broth, stir slightly........
- Cover and cook on low heat for 6 hours, stirring occasionally and leaving lid to crockpot partially opened midway thru cooking.......this helps to keep your chicken from becoming too watery as it cooks !.
