Ingredients for Crockpot Carnitas:

  1. 3 lbs pork (butt or shoulder) cut into one inch pieces.
  2. 1 sweet onion, diced.
  3. 3-4 cloves garlic.
  4. 2 cinnamon sticks.
  5. 1/2 T cumin.
  6. 1/2 T oregano.
  7. 1/2 t chipotle chili powder.
  8. 1/2 t salt.
  9. 1/4 t pepper.
  10. 1 large orange (zest and juice).

Step by step how to cook Crockpot Carnitas:

  1. Place diced onion, garlic and cinnamon sticks in bottom of slow cooker..
  2. Mix oregano, cumin, salt, chipotle powder, and pepper in a small bowl..
  3. Pour powder mixture over cubes pork and stir to coat all pieces evenly..
  4. Dump pork over top of onions in crock pot..
  5. Zest some of the orange over top of pork..
  6. Cook on low for 6-8 hours..
  7. Remove cinnamon sticks, squeeze orange juice over pork and stir..
  8. Serve alone, as a burrito or taco filling, over rice, etc..
