Ingredients for Egyptian/Lebanese Okra (Bamia) Vegan/Vegetarian:
- 400 gms Okra.
- 500 mls Vegetable Stock.
- 350 mls Passata.
- 1 Medium Onion (finely chopped).
- 2 Garlic Cloves (crushed).
- 1 Lemon (juiced).
- 2 tbs Olive Oil.
- The Spices.
- 2 Bay Leaves.
- 2 tsp Ground Cumin.
- 2 tsp Ground Corriander.
- 1/2 tsp Cayenne Powder.
- 1 dried Chili.
- to taste Salt & Pepper.
Step by step how to cook Egyptian/Lebanese Okra (Bamia) Vegan/Vegetarian:
- Saute Onion and Garlic (Approx 10mins).
- Add Spices and fry until fragrant (Approx 2mins).
- Add Okra and stir (Approx 2mins).
- Add passata and vegetable stock and bring to boil. Turn heat down, cover and simmer for approx 20mins.
- Add lemon juice, stir and serve.
