  1. 2 tablespoon extra virgin olive oil.
  2. 1/2 large white onion, diced.
  3. 1 medium green zucchini, diced.
  4. 4 stems of brocoli, peeled & diced.
  5. 1 small cauliflower, diced.
  6. Carrot leafs & stems from 2 bunch of garden carrots, chopped.
  7. to taste Fresh ground black pepper.
  8. 1 liter vegetable broth.
  9. 1/2 liter water.

  1. In a large pot, heat up the oil at medium/high heat and cook the onion for one minute, stirring often..
  2. Add the zucchini and cook for another minute, stirring often..
  3. Add the brocoli and the cauliflower and cook for another minute, stirring often..

  5. Add the vegetable broth and the water, mix well, bring to boil and let cook uncover for 20 minutes..
