Ingredients for Fajitas Stuffed Chicken Breasts:

  1. 2 Tbl. grape seed oil.
  2. 1/2 each : yellow, green, orange, and red bell peppers, cut in slices.
  3. 1/2 onion , cut in slices.
  4. sea salt.
  5. fresh ground black pepper.
  6. 4 oz cream cheese.
  7. 1/4 c. shredded cheddar cheese.
  8. 1/4 c. pepper jack cheese.
  9. 4 chicken breasts.
  10. 2 tsp each : cumin, chili powder, garlic, salt, pepper (mixed together in bowl).
  11. 2 Tbl grape seed oil.

Step by step how to cook Fajitas Stuffed Chicken Breasts:

  1. Heat first two tablespoons of grapeseed oil on high. Add sliced bell peppers and onions. Sprinkle with sea salt and freshly ground black pepper. Cook on high until peppers are almost caramelized.
  2. In a small bowl mixed together cooked peppers and onions and all the cheeses. Set aside.
  3. Coat each chicken breast with spices on both sides. Cut a small pocket in each chicken breast and stuffed with bell pepper cheese mixture.
  4. Add 2 tablespoons of grapeseed oil back into skillet and Heat on high. Place each stuffed chicken breast in the skillet and cook 5 minutes on each side.
  5. Serve with Mexican style rice.
