- 1/2 cup grated parmesan cheese.
- 2 boneless, skinless chicken breasts.
- 4 tbsp olive oil.
- to taste salt & pepper.
- 1 cup sliced mushrooms of your choice.
- 1/2 red onion, cut in thin wedges.
- 1 tsp dried oregano.
- 1 tsp dried thyme.
- 2 tbsp red wine vinegar.
