Ingredients for Sourdough Banana Bread:

  1. 113 g soft unsalted butter.
  2. 50 g brown sugar.
  3. 40 g condensed milk.
  4. 1 large egg (70g).
  5. 1 tsp dark rum or vanilla extract.
  6. 1 cup unfed sourdough starter(room temperature).
  7. 3 bananas, mashed.
  8. 240 g all purposes flour, sifted.
  9. 1/2 tsp salt.
  10. 1/2 tsp baking soda.

Step by step how to cook Sourdough Banana Bread:

  1. Grease and flour 8 nonstick rectangle carbon steel muffin pan (5.5*9cm) or 8*5 inch loaf pan..
  2. In a separate bowl combine the flour, salt, and baking soda then sifted..
  3. Cream together the butter with sugar. Add egg, and rum (vanilla). Mix in the condensed milk, sourdough starter and mashed bananas..
  4. Add the flour mixture to banana mixture and mix just until combined. Do not over-mix. (Or you will have tough bread!).
  5. Pour the batter into a greased 9x5-inch bread pan. Bake at 350°F for 40-45 minutes or until a toothpick inserted into the center of the loaf comes out clean..
  6. Cool completely prior to slicing..
