  1. 1 medium whole snapper (cleaned and butterflied).
  2. 1 thumb galangal (crushed).
  3. 1 tbsp garlic mince.
  4. 2 tbsp rice flour.
  5. 3 tbsp tapioca flour.
  6. 2 small green mango (peeled and shredded).
  7. 1 tbsp dried shrimp.
  8. 1 tbsp garlic mince.
  9. 1 tbsp pickle chili (i bought from grocery store).
  10. 50 ml fish sauce.
  11. 50 gr sugar.

  1. Marinate fish with galangal, garlic, salt and pepper.
  2. Mix rice flour and tapioca starch together, add salt and pepper to taste.
  3. Preheat a large wok with heaps of oil, coat fish into flour mixture, slightly press it, so the flour will stick well to the fish, fry until golden brown.
  4. Prepare the salad, add garlic, chili, dried shrimp, fish sauce, sugar mix together. Pour in shredded green mango, mix well.
