Ingredients for Fiona's Chorizo and Chocolate "chilli":
- 1 tsp olive oil.
- 1 tsp Rose paprika.
- 1 tsp ground cumin.
- 1 tsp cumin seeds.
- 1 tsp ground coriander.
- 1 tsp ground cinnamon.
- 7 each cardamom pods (crushed).
- 1 tbsp crushed garlic.
- 1 each large brown onion sliced.
- 1 mild red chilli pepper deseeded and diced.
- 170 grams chorizo sausage sliced into 2 mm thick half moons.
- 500 grams mince beef.
- 400 grams tinned kidney beans drained.
- 400 grams tinned chopped tomatoed.
- 50 grams dark chocolate chopped.
- 250 ml Red wine.
- 1 beef stock cube or tablespoon gravy granules.
Step by step how to cook Fiona's Chorizo and Chocolate "chilli":
- In a large pot heat the olive oil and add the onion, garlic, pepper, and spices.
- Add the chorizo and let it release it's oils into the pan.
- Add the mince beef and brown.
- Add chopped tomatoes red wine and stock cube/gravy granules and simmer for 30 mintues. If you don't want to add wine just use beef stock.
- Add grated chocolate and simmer for another 30 minutes.
- Add kidney beans and simmer for 10 minutes.
- Enjoy.....We like to eat this with some grated cheese and either tortilla chips or tortilla bread.
