Ingredients for Fiona's Chorizo and Chocolate "chilli":

  1. 1 tsp olive oil.
  2. 1 tsp Rose paprika.
  3. 1 tsp ground cumin.
  4. 1 tsp cumin seeds.
  5. 1 tsp ground coriander.
  6. 1 tsp ground cinnamon.
  7. 7 each cardamom pods (crushed).
  8. 1 tbsp crushed garlic.
  9. 1 each large brown onion sliced.
  10. 1 mild red chilli pepper deseeded and diced.
  11. 170 grams chorizo sausage sliced into 2 mm thick half moons.
  12. 500 grams mince beef.
  13. 400 grams tinned kidney beans drained.
  14. 400 grams tinned chopped tomatoed.
  15. 50 grams dark chocolate chopped.
  16. 250 ml Red wine.
  17. 1 beef stock cube or tablespoon gravy granules.

Step by step how to cook Fiona's Chorizo and Chocolate "chilli":

  1. In a large pot heat the olive oil and add the onion, garlic, pepper, and spices.
  2. Add the chorizo and let it release it's oils into the pan.
  3. Add the mince beef and brown.
  4. Add chopped tomatoes red wine and stock cube/gravy granules and simmer for 30 mintues. If you don't want to add wine just use beef stock.
  5. Add grated chocolate and simmer for another 30 minutes.
  6. Add kidney beans and simmer for 10 minutes.
  7. Enjoy.....We like to eat this with some grated cheese and either tortilla chips or tortilla bread.
