Ingredients for "Cajun Crack" Dirty Rice:
- 500 gms pork mince.
- 500 gms boned & skinned chicken thighs chopped.
- 500 gms small to medium tiger prawns.
- 2 cup diced red, yellow or green capsicum (Bell peppers).
- 2 cup diced red or purple onion.
- 2 cup chopped celery.
- 2 bay leaves.
- 4 clove garlic.
- 1 cup chopped green onion.
- 1/4 cup chopped jalapenos.
- 1 tsp fresh thyme.
- 1/4 cup chopped fresh parsley.
- 1 tbsp Louisiana Cajun Seasoning or 'Slap Yo' Mama' seasoning, etc.
- 1 dash Worcestershire sauce.
- 1/2 tsp cayenne pepper.
- 1 butter or bacon drippings.
- 2 cup long grain rice.
- 4 cup chicken broth (low-salt).
Step by step how to cook "Cajun Crack" Dirty Rice:
- Brown mince and chicken in oil, put to side..
- Saute' peppers, onion, celery, parsley, garlic & jalapenos in butter or bacon drippings for 10-15 minutes..
- Add mince, chicken, shrimp, cajun seasoning, cayenne, Maggi, thyme, rice and stir thoroughly..
- Add chicken broth and bring to boil..
- Simmer over low heat for 20-25 minutes..
