Ingredients for Thai Meatloaf:

  1. 1 kg chicken or turkey mince.
  2. 1 1/2 cup cornflakes.
  3. 1 small knob ginger, grated.
  4. 1 egg, lightly beaten.
  5. 2 tbsp fish sauce.
  6. 4 spring onions, sliced.
  7. 1/2 bunch coriander, roughly chopped.
  8. 1/3 cup sweet chilli sauce.
  9. 1 sweet chilli sauce, extra.

Step by step how to cook Thai Meatloaf:

  1. Preheat oven to 180°C.
  2. Add all ingredients into a mixing bowl and with clean hands mix well.
  3. In an oiled lasagna dish spread mixture evenly, ensuring it's not too thick and drizzle the top liberally with the extra sweet chilli sauce.
  4. Bake in the oven for 40 mins and serve with steamed rice and salad. Yum!.
