Ingredients for Thai Meatloaf:
- 1 kg chicken or turkey mince.
- 1 1/2 cup cornflakes.
- 1 small knob ginger, grated.
- 1 egg, lightly beaten.
- 2 tbsp fish sauce.
- 4 spring onions, sliced.
- 1/2 bunch coriander, roughly chopped.
- 1/3 cup sweet chilli sauce.
- 1 sweet chilli sauce, extra.
Step by step how to cook Thai Meatloaf:
- Preheat oven to 180°C.
- Add all ingredients into a mixing bowl and with clean hands mix well.
- In an oiled lasagna dish spread mixture evenly, ensuring it's not too thick and drizzle the top liberally with the extra sweet chilli sauce.
- Bake in the oven for 40 mins and serve with steamed rice and salad. Yum!.
