Ingredients for Butter Chicken:

  1. For the marinade.
  2. Chicken (boneless).
  3. 2 tsp curd.
  4. Pinch salt.
  5. 1/4 tsp red chilli powder.
  6. 1/8 tsp turmeric.
  7. 1/4 tsp garam masala.
  8. 1/4 tsp kasuri methi.
  9. 1/2 tsp ginger-garlic paste.
  10. 1 tsp oil.
  11. For the gravy.
  12. 1 tsp oil.
  13. 1 tbsp cashew nuts.
  14. 1/2 medium onion, roughly chopped.
  15. 1 medium tomato, roughly chopped.
  16. 1/2 tsp ginger-garlic paste.
  17. For finishing the sabzi.
  18. 1/2 tbsp butter.
  19. 1/4 tsp cumin seeds.
  20. 1-2 cloves.
  21. 1-2 cardamom.
  22. 1/4 " cinnamon.
  23. 1 green chilli slits.
  24. 1/4 tsp red chilli powder.
  25. 1/2 tsp cumin-coriander powder.
  26. 1/2 tbsp sugar/tomato ketchup.
  27. 1/2 tsp salt (to taste).
  28. 1/4 tsp garam masala.
  29. 1/4 tsp kasuri methi.
  30. 1 tbsp cream (or butter and milk).

Step by step how to cook Butter Chicken:

  1. Mix all the ingredients (except chicken) for the marinade in a bowl. Taste it, adjust flavour if needed..
  2. Add chicken and coat it in the marinade fully. Let it rest for few hours (1-2 hours at least)..
  3. Grill the chicken on stove top with butter..
  4. For the gravy, add oil to a pan..
  5. Add cashew nuts and roast till they are light brown..
  6. Add onions and cook till translucent..
  7. Add the ginger-garlic paste and cook till the raw smell fades..
  8. Add the tomatoes and cook till oil separates/gets mushy..
  9. Let it cool down and then blend to a paste..
  10. To finish the sabzi, add butter to a pan..
  11. Add the whole spices (cumin, cinnamon, cardamom, clove) and cook till it sizzles..
  12. Add onions, ginger-garlic paste and green chilli slits and cook..
  13. Add tomato ketchup/sugar and all the dry spices except garam masala and kasuri methi..
  14. Mix well and let it cool for 2-3 min..
  15. Add cream (or butter and milk) and mix well..
  16. Add kasuri methi and garam masala..
  17. Add the chicken pieces and cook for a minute..
  18. Serve hot with rice/paratha/naan!.
