Ingredients for Portobello Mushrooms, Red Pepper and Cucumber Pasta:

  1. 2 Cups Chopped Portobello Mushrooms.
  2. 1 Medium Organic Red Pepper.
  3. 1 Medium Organic Cucumber.
  4. 2 Cloves Minced Garlic.
  5. 1 Cup Onion.
  6. 1 Pack Organic Spaghetti (Pasta of your choice).
  7. 2 tbsp Organic All Purpose Flour.
  8. 1 tbsp Olive Oil.
  9. 2 tbsp Organic Unsalted Butter.
  10. 1 cup White Wine.
  11. 1 tbsp Oregano.
  12. 2 Cups Organic Skim Milk.
  13. 1 tsp salt.
  14. 1/2 tsp pepper.

Step by step how to cook Portobello Mushrooms, Red Pepper and Cucumber Pasta:

  1. Cook Pasta according to the package and set aside.
  2. Heat Olive Oil in a Large Non-Stick Skillet over medium heat.
  3. Add Garlic and Onion, sauté for 2 minutes.
  4. Add Mushrooms and sauté for another 2 minutes.
  5. Add Butter and White Wine and let it cook for another 2 minutes.
  6. Add All Purpose Flour and stir until you don’t see the flour anymore.
  7. Add Skim Milk, stir and let it Simmer for 5 minutes.
  8. Add Red Pepper, Cucumber and cook for a minute.
  9. Add Salt and Pepper.
  10. Done and serve.
